is a soup thickened with ground melon seeds and contains leafy and other vegetables.  It is one of the most popular soups prepared by most tribes in Nigeria with considerable variation and often eaten with dishes like Pounded Yam, Semo and Eba. 

Egusi is a West African name for the seeds of plants like squash, melons, and gourds that, when dried and ground become a staple ingredient in many West African dishes and these seeds are rich in fat and protein.  Particularly, in Nigerian culture, egusi soup is often prepared with goat meat, assorted meats, beef and fish.

Egusi Soup Recipe

Below are the ingredients you will be needing to prepare egusi soup.

  1. blended Egusi (melon seeds)
  2. Assorted meats
  3. Pomo
  4. Stock fish
  5. Dry fish
  6. Yellow pepper
  7. Palm oil
  8. Seasoning cube
  9. Salt
  10. Iru (Locust beans)
  11. Onions
  12. Cut bitter leaf

Method to Prepare Egusi Soup

  1. Blend onions and yellow pepper and set aside
  2. Chop onions and mix it with the blended egusi using hot water and set aside.
  3. Put pot on fire, add Palm oil allow it to be hot
  4. Add Iru (Locust beans) add the mix egusi cut it little by little into balls and let it fry, then scoop it out of the oil and set aside
  5. Add your blended pepper and onions, Allow it to fry very well,
  6. Add your boiled Assorted meats and pomo, with stock fish and dry fish, take some of the dry blended egusi and add the Assorted meat stock let it be watery
  7. Pour it into the sauce allow it to boil and keep on mixing it at this point so it won’t get burnt,
  8. Once it done add the fried egusi and mix it well if it’s too thick add more stock, then add seasoning cube to taste, salt to taste, crayfish and bitter leaf and your soup is ready.
